FACTS: Noberto is an expert in holistic and regenerative farming, and manages his farm 100% organically, utilizing composting and organic agricultural practices across his farm's production. Nolberto is a third generation coffee farmer, following in the footsteps of his father, and grandfather. Nolberto starts the fermentation process from within the cherry (allowing the natural bacteria to enter through the tip where the cherry is picked) in a cherry ferment. After this, he keeps the cherries in sealed Grain Pro bags for (48) hours. After depulping and washing the coffee, Nolberto allows the coffee to sit in sealed pickle barrels for 100 hours! From there, Nolberto dries the coffee for over 25 days.
