Strawberry Shake is a rare Strawberry Co-Ferment brought to you by female producer Viviana Martinez.  Viviana is a 4th generation coffee farmer, focusing on small batch co-fermentations and experimental processed coffees.  Vivana's farm (Finca El Eden) sits at over 1400 MASL in La Tebaida, Quindio, Colombia. 

For this Co-Ferment, Viviana used a Black Honey varietal, selecting only the ripest cherries and letting them ferment in cherry for over 60 hours.  After the cherry ferment, she added fresh, ripe strawberries to ferment with the coffee cherries.  This process allows the strawberries natural sweetness and acidity to shine through in each cup.  After fermentation the cherries were dried on raised beds until reaching a peak humidity of between 10-11%.

Fantastic

I let the first bag purchased rest for about two weeks, wow the flavors were amazing, on the Deep 27 and Aiden both did not disappoint, very great coffee I bought another box lol. Hopefully it stays around a while.

Phenomenal!

Wow! I can’t say enough about this one. I got it through Fellow Drops, received it 5 days after roast. “Strawberry Shake” is actually quite an appropriate way to describe the dominant notes. I can definitely taste the peach in there as well. I’ve tried it as pour over and via the “SOUP” method (a YouTube trend actually worth trying) which extracts the maximum amount of bright and fruity notes. I rarely spend this much on coffee since I roast my own, but couldn’t say no to trying this one. I have zero regrets. What a wonderful coffee!
