This coffee was produced by brothers Didier Pajoy, and Christian Pajoy, and their father Elias Pajoy in La Planta, Huila Colombia, and has a SCA Cupping score of 87.5. They enjoy being called "Rebel Gang" as they farm their coffee in former Rebel FARC territory. Each family member selectively picks cherries at peak ripeness utilizing a Brix meter, and leaves them overnight for a 12-hour initial cherry ferment. The cherries are then depulped first thing the next morning and fermented in a very low oxygen environment (recycled and sealed pickle barrels), then washed 36-40 hours thereafter.
